Ingredients
  • Pomelo or grapefruit, peeled and segmented
  • ½–1 jar Thai Dressing
  • Roasted peanuts, crushed
  • Fresh herbs (basil or mint)

Optional

  • Fried onions
  • Protein of choice
  • Fish sauce, to taste
Method

Prep the fruit

Peel the pomelo or grapefruit and separate the flesh into a large bowl.

2  Dress

Add about half a jar of Thai dressing. Toss gently, taste, and adjust with more dressing if needed.

Chill

Refrigerate for 30 minutes to let the flavours come together.

4  Finish and serve

Top with crushed roasted peanuts, fresh herbs, and fried onions if using. Add a protein or a splash of fish sauce if desired.
