1 Grill the veggies
Heat oil in a pan. Add corn, butternut squash, or chicken first (if using). Add bell peppers and chilli later to retain crunch. Finish with lime juice, mango chilli dressing, salt, and pepper.
2 Warm the tortillas
Heat tortillas on a pan, in the oven, or microwave until soft and pliable.
3 Build the base
Spread refried beans on each tortilla. Top with pico de gallo and a few salad leaves if using.
4 Add fillings
Layer grilled veggies, add a generous spoon of guacamole, and drizzle with mango chilli dressing.
5 Finish and serve
