1 Prep the rocket
Wash the rocket leaves in ice-cold water and dry thoroughly. Gently massage with a little olive oil and spread them out to form a bed in a salad bowl.
2 Add balsamic
Drizzle aged balsamic vinegar over the rocket in a circular motion. Do not toss.
3 Assemble the salad
Layer the yellow watermelon over the leaves, followed by crumbled feta. Drizzle a little more balsamic and a teaspoon of olive oil.
4 Prepare the nuts
Lightly roast the walnuts and roughly crush them. Toss with honey and a pinch of salt.
5 Finish and serve
