Ingredients

For the salad

  • 5–10 mixed salad leaves
  • A small bowl rocket leaves
  • 1 cucumber
  • 5-6 cherry tomatoes
  • 1 red round radish
  • 1 lemon
  • 1 small bowl cooked quinoa

For the vinaigrette

  • 3 tbsp extra-virgin olive oil
  • ½ tbsp balsamic vinegar (or any vinegar of choice)
  • A fresh squeeze of lime
  • Salt, to taste
  • Black pepper, to taste
Method

Prep the vegetables

Wash and clean all the vegetables thoroughly. Slice as preferred.

2  Make the vinaigrette

Whisk together olive oil, vinegar, lime juice, salt, and pepper until well combined.

Assemble the salad

In a bowl, layer the salad leaves first, followed by quinoa and sliced vegetables.

4  Dress and finish

Drizzle the vinaigrette over the salad. Garnish with microgreens if you like. Serve immediately.
