Ingredients
  • Potato skins
  • Olive oil, enough to coat
  • Salt, to taste
  • Black pepper, to taste

Optional seasonings

  • Fresh or dried herbs, chopped
  • Garlic or garlic salt
  • Five-spice mix or any seasoning of your choice
Method

Season the skins

Toss the potato skins with olive oil, salt, pepper, and any optional herbs or seasonings you like.

2  Arrange

Line an oven tray with parchment paper and arrange the potato skins in a single layer.

Bake

Bake at 180°C for 20–25 minutes, until golden brown and crisp.

4  Serve

Let them cool slightly and serve with a dip, sauce, hummus, or ketchup of your choice. We like them best with a spicy mayo.
