1 Prep the bok choy
Trim and discard the thick base. Separate the stems, cut into desired sizes, and wash thoroughly to remove any dirt.
2 Start the aromatics
Heat oil in a pan over medium-high heat. Add garlic, ginger, and green chilli. Sauté briefly until fragrant.
3 Cook the stems
Add the bok choy stems first and stir-fry for 4–5 minutes until just tender.
4 Add the leaves
Add the leaves and cook for another 2 minutes until wilted but still vibrant.
5 Season and finish
