Ingredients
  • 1 sweet corn with husk
  • 1 tbsp butter
  • Salt, to taste
  • Black pepper, to taste
  • ½ tsp chaat masala
  • ½ tsp red chilli powder

Method

Steam the corn

Place the sweet corn with the husk intact in the microwave. Cook for 2½ minutes on one side, flip, and cook for another 2½ minutes. Let it rest briefly. The corn will be hot and perfectly steamed inside the husk.

2  Make the masala butter

Melt the butter in a bowl. Add salt, pepper, chaat masala, and red chilli powder. Mix well.

Toss and finish

Remove the husk, cut the corn into roundels or thick chops, and toss in the masala butter. Finish with a generous squeeze of lemon.
