1 Prep
Wash and cut the carrot and cucumber into thin strips. Lightly salt the tofu and slice both the tofu and mango into thin pieces.
2 Soften
Dip each rice paper sheet in water until pliable and slightly soft.
3 Assemble
Place the softened rice paper on a moist cutting board. Layer basil leaves, tofu, and vegetables about one-third from the edge.
4 Roll
Drizzle a spoonful of dressing over the filling and roll once. Add mango slices, tuck in the sides, and roll tightly to seal.
5 Finish & Serve
