1 Prep the eggplant
Slice the eggplant into 1 cm thick discs. Lightly rub each disc with olive oil to prevent discolouration. Do not salt at this stage.
2 Pre-bake
Bake the eggplant slices in a preheated oven at 200°C for 8–9 minutes, until about 70–80% cooked.
3 Add toppings
Remove from the oven and spread marinara or pesto over each slice. Top with vegetables and cheese of your choice.
4 Bake again
Return to the oven and bake for another 6–8 minutes, until the cheese melts and turns lightly golden.
5 Finish and serve
