Ingredients
  • 1 large round eggplant
  • Marinara or pesto sauce (homemade or store-bought)
  • Mixed vegetables, for topping
  • Cheese of choice
  • Olive oil, as needed
  • Salt and black pepper, to taste
  • Microgreens, for garnish
Method

Prep the eggplant

Slice the eggplant into 1 cm thick discs. Lightly rub each disc with olive oil to prevent discolouration. Do not salt at this stage.

2   Pre-bake

Bake the eggplant slices in a preheated oven at 200°C for 8–9 minutes, until about 70–80% cooked.

Add toppings

Remove from the oven and spread marinara or pesto over each slice. Top with vegetables and cheese of your choice.

4  Bake again

Return to the oven and bake for another 6–8 minutes, until the cheese melts and turns lightly golden.

5  Finish and serve

Season with salt and pepper to taste. Garnish with microgreens and serve warm.
