1 Prep the tomatoes
Roughly chop the tomatoes. Use the entire tomato, including tops and juices. Set aside.
2 Start the base
Heat olive oil in a large pot. Add garlic and cook until lightly browned.
3 Bloom the seasoning
Add Italian seasoning, chilli flakes, salt, and pepper. Stir well so the spices coat the oil and don’t burn.
4 Cook the tomatoes
Add the tomatoes along with all the juices. Stir in sugar and adjust seasoning.
Cook on medium-high heat for 30–40 minutes, stirring occasionally, until thick and jammy.
