1 Parboil
Place whole potatoes (unpeeled) in a pot, cover with water, add salt, and bring to a boil. Cook until just tender - do not overboil.
2 Cool & Crisp
Drain and let the potatoes cool. Deep-fry until lightly golden, or skip frying and plan for longer oven or air-fryer time.
3 Smash
Using the bottom of a mug or measuring cup, gently smash each potato without flattening completely.
4 Finish Cooking
Refry until golden and crisp, or air-fry until crisp. Alternatively, roast in a preheated oven at 200°C for about 20 minutes, brushing lightly with oil.
5 Season & Serve
