Ingredients
  • 250 g carrots
  • 2 tbsp olive oil
  • 8–10 garlic cloves, minced
  • 3 tbsp balsamic vinegar OR 1½ tbsp honey + 1½ tbsp soy sauce
  • Salt, to taste
  • Black pepper, to taste
  • Fresh herbs, to garnish (parsley recommended)
Method

Prepare the carrots

Wash, peel, and clean the baby carrots thoroughly.

2  Sauté the garlic

Heat olive oil in a pan over medium heat. Add minced garlic and sauté briefly until fragrant.

Cook the carrots

Add the carrots to the pan and toss well to coat. Pour in the balsamic vinegar (or honey–soy mixture).

4  Char & glaze

Cook for 10–15 minutes, gently tossing occasionally to ensure even charring. Add fresh herbs during the last few minutes if you want them lightly charred.

5  Season & serve

Season with salt and pepper. Garnish with fresh herbs and serve warm.

6  Pro Tip

If cooking mixed-colour carrots, cook purple carrots separately. Their vibrant pigment can stain the garlic, herbs, and lighter carrots.
