1 Prepare the beetroots
Wash and scrub the beetroots thoroughly. Slice very thinly using a slicer or sharp knife.
2 Chill
Place the slices in a bowl of chilled water for a few minutes, then drain well.
3 Arrange
Lay the beetroot slices in a single layer on a serving platter.
4 Season
Sprinkle with salt or smoked umami seasoning and drizzle with lemon juice or vinegar.
5 Finish & serve
